When I was in Australia working as a nanny, I was looking after two beautiful girls. One day I asked them what was the cake called "Banana Bread" made of ? They were so surprised that I never heard about it, that they taught me how to make it myself. So today I share with you the recipe that I mixed with oats in a muffin tin. I hope you will enjoy it !

So first you will need...
INGREDIENTS #healtyrecipe #healthymuffins
3 bananas (preferencialy ripe)
1/4 cup of milk (I used almond milk but any milk will work)
1/4 cup of honey ( I used maple sirup on this one)
3 chocolate squares (I used the black one)
1 teaspoon of cinnamon
12 drops of vanilla extract
1 1/2 teaspoon of baking soda
1/3 cup of coconut oil
1 3/4 cups of flour
1 pinch of salt
1/4 cup of oats
2 eggs
→ Fell free to add blueberry unsted of chocolate chunks.

➤ Preheat the oven to 180 degres celsius. (about 350 degres Farenheit)
➤ Mash the bananas
➤ Choppe the chocolate
➤ In a bowl pour the coconut oil melted, the maple syrup and the eggs. Beat all together with a whisk.
➤ Add in the mixture the the milk, vanilla, salt, baking soda, mashed bananas and cinnamon. Beat well again until it's smooth.
➤ Add the flour, mix.
➤ Add the oats and the chocolate chunk. (or the blueberries)
➤ Stir it all up.
➤ Pour the paste in your muffin cups and bake them for about 25 to 28 minutes.
And voilà ! You're all done.
Now let them cool down for a bit, and enjoy them at anytime !

→ My tips :
Sprinkle the top of the muffins with some oats or chokkie chunks before to cook them.
Insert a toothpick in a muffin, if it comes out clean, the cooking time is good.
Keep them up to three days.
Beyond three days, you can freeze them up to two months.
